The last rinse decides the finish. Purified water sheets off paint, glass and trim and dries without a single spot, so you are drying for shine rather than damage limitation.
At fleet scale the maths change again: curtain-siders and tippers are a lot of surface area to hand dry, and a purified rinse lets a yard full of vehicles air dry clean overnight.
